Choose sweet onions for ideal flavor

To prepare the onions: Trim and peel the onions.

Thinly slice into half-moons.

To Caramelize the oniosn: Add the onion and thyme to a wide pan

Add the salt. This will help draw out some of the moisture from the onions.

Cook on medium-low. After about 30 minutes, you'll start to see some browning aka "caramelization". Start stirring the onions every few minutes now.

After about an hour to 75 minutes, you should have dark, golden caramelized onions.

Add a couple of tablespoons of water and use a wooden spoon to scrape up the fond from the bottom of the pan.

Serve and enjoy. Chef's Tip: When cooking, use a wide pan to get the maximum surface area for cooking. This will ensure even cooking and also help draw out the moisture for more intense color and flavor
