What is Kohlrabi? Kohlrabi is a root vegetable, and a member of the turnip family. It has a spicy peppery bite like turnips, but also a subtle, sweet crunch that reminds me of broccoli stalks.

To make the Flax dressing: Combine 1 tbsp ground flax meal with 3 tbsp orange juice. Let sit for 5 minutes. You can substitute with other citrus like grapefruit, lemon, lime, or even blood orange.

To prepare the Kohlrabi, first trim off the bottom and top.

You'll notice the dark green skin. This is tough and fibrous so you'll want to remove it.

Use a sharp to remove the tough outer skin

Use a mandolin to thinly slice the kohlrabi into chips

Use a knife to finish the job: Julienne the kohlrabi into thin matchstick pieces

To make the rest of the slaw: Thinly slice the celery, including the leaves.

Add 1 cup shredded carrots

To finish the dressing: Once the flax egg has "set", add the salt, pepper, celery seed, and honey

Add the dressing to the slaw mix

Use your hands to toss the slaw, thoroughly coating the veggies with the dressing.

Kohlrabi is the star of the show. If you can't find it, though, you can substitute with broccoli stalk, jicama, or regular green cabbage.
