1. Preheat oven to 400 degrees F. 2. Gather ingredients. I use as organic and natural as possible. Also - there is great flexibility with the filling. I've used bell peppers and olives; sneak in greens. Cook with what you have!

3. Spray muffin tins with non stick oil (coconut, olive). 4. Line tins with ham. Most packages contain 6-10 slices.

5. Chop filling ingredients (in this case, onion and mushroom, and greens if need be). 6. Layer greens and filling ingredients - careful not to overfill! Cups should be half-full.

7. Crack egg into cup.

8. Season with favorite seasonings. I recommend pepper, granulated garlic and onion, and smoked paprika. 9. Garnish with chopped green onion. 10. Bake 12-15 mins - just until whites are firm.

Enjoy!! Perfect for quick breakfasts. I usually do 2 in the morning with half a baked sweet potato.
