For the wild garlic oil - roughly chop 25g of wild garlic...

Add to a food processor, with 35ml of light olive oil. Season with a pinch of salt, and blitz!

Set aside in a container for later.

For the brown shrimp lemon butter sauce - Grate the zest of 1 lemon...

Add 50g of unsalted butter to a heated pan...

When it starts to go a brown nutty colour, take off the heat. Add the lemon zest and the juice of the lemon. Season with salt and pepper. Set aside.

Finely chop some fresh dill for the sauce, some dill for garnish and pea shoots for garnish.

For the sea bass - scale, debone and trim the fish. Season with salt and pepper.

In a steamer...steam for 5 mins.

Heat the sauce back up and bring to the boil. Add 90g of brown shrimps and boil for 1 minute. Add chopped dill.

Remove the fish from the steamer, peel the skin off the fish.

To plate up - place the sea bass in the centre of the plate. Pour the brown shrimp lemon butter sauce on top, some dill and pea shoots, and drizzle the wild garlic oil around the plate. Enjoy!
